Kaju karela nu shaak – Cashew nuts bitter gourds curry – No onion no garlic recipe

Hi friends, I was in travelling in last week, so could not  visit your space, so sorry for that. I will visit your space soon. My today's post is Kaju karela nu shaak .This rich and spicy curry is perfect  for party or festival time.




Ingredients:

2 cup karela cut in long slice (bitter gourds)
½ cup roasted cashew nuts
½ tsp cumin seeds
Pinch asafetida (hing)
¼ tsp turmeric powder
½ tbsp red chili powder
½ tbsp garam masala powder
1 tbsp sugar
3 tbsp oil
Salt to taste + 1 tbsp extra



Method:

Combine peeled and slice karela (bitter gourds) and salt in a bowl, mix it well, keep aside for 15 minutes, Squeeze out excess water to remove bitterness, then wash well with water and squeeze properly.
Heat the oil in a pan and add asafoetida, cumin seeds and sauté for seconds.  Add turmeric powder, slice  karela (bitter gourds), salt and cook on low flame for 10 minutes, close the lid on pan. Stirring occasionally. Add sugar, red chili powder, garam masala powder and mix it well, cook for another 2 minutes or till karela is tender . Add roasted cashew nuts and cook for minutes. Garnish with coriander leaves.
