Sabudana Khichadi - sweet and spicy sago with potato (vrat ka khana)


Ingredients:

1 cup sabudana (sago)
2 tbsp peanuts
3 chopped green chilies
1 chopped potato
2 tbsp oil
5-6 curry leaves
1 tsp cumin seeds
Pinch of turmeric powder
1 tsp red chili powder
1 tsp lemon juice
1 tsp sugar
Salt to taste
Coriander leaves

Method:


Wash sabudana two to three times and then soak in one-cup water for five hours.Sabudana grains should be separate and moist. Roast peanuts, peel off the skin and then grind coarsely.  Heat oil in a pan, add curry leaves, cumin seeds, turmeric powder and chopped green chilies. When cumin seeds crackle add the chopped potato. Cook till the potatoes are done. Add sabudana, ground peanuts and sugar, sauté for four to five minutes, stirring well. Sprinkle a little water, add salt and lime juice. Mix well. Remove from heat. Sprinkle chopped coriander leaves. Serve hot.

Mandvi paak (shing paak) - Peanut bar

Ingredients:

1 cup peanuts
¾ cup sugar
1 tsp cardamom powder
1 tbsp ghee
¼ cup water

Method:
Blend the peanuts in blender like a fine powder. Dissolve the sugar with ¼ cup of water and bring it to a boil while stirring continuously.  Boil the syrup again until it is of 1 string consistency. Add peanut powder, ghee and cardamom powder . Remove from the fire while stirring continuously. Spread the mixture on a thali (flat metal plate) and allow to cool. Cut into desired shape.

Singoda ni kheer – Water chestnut flour payasam – fasting food, Shravan maas special recipe



Ingredients:

2 tbsp singoda flour (Water chestnut flour)
1 ½ cup milk
2 tbsp sugar
Pinch of nutmeg powder
Almond slices for garnishing

Method:


Boil milk in a heavy bottomed pan, add singoda flour (Water chestnut flour) and sugar mix it well, taking care that no lump remains, cook on low flame. Add nutmeg powder. While stirring continuously for 10 minutes or until the milk is slightly thickened. Garnish with almond slices, serve chilled.

Kaju karela nu shaak – Cashew nuts bitter gourds curry – No onion no garlic recipe

Hi friends, I was in travelling in last week, so could not  visit your space, so sorry for that. I will visit your space soon. My today's post is Kaju karela nu shaak .This rich and spicy curry is perfect  for party or festival time.




Ingredients:

2 cup karela cut in long slice (bitter gourds)
½ cup roasted cashew nuts
½ tsp cumin seeds
Pinch asafetida (hing)
¼ tsp turmeric powder
½ tbsp red chili powder
½ tbsp garam masala powder
1 tbsp sugar
3 tbsp oil
Salt to taste + 1 tbsp extra



Method:

Combine peeled and slice karela (bitter gourds) and salt in a bowl, mix it well, keep aside for 15 minutes, Squeeze out excess water to remove bitterness, then wash well with water and squeeze properly.
Heat the oil in a pan and add asafoetida, cumin seeds and sauté for seconds.  Add turmeric powder, slice  karela (bitter gourds), salt and cook on low flame for 10 minutes, close the lid on pan. Stirring occasionally. Add sugar, red chili powder, garam masala powder and mix it well, cook for another 2 minutes or till karela is tender . Add roasted cashew nuts and cook for minutes. Garnish with coriander leaves.

Bhindi Capsicum Masala – Okra Capsicum dry curry


Ingredients:

1 cup chopped bhindi (Okra)
½ cup chopped capsicum
¼ cup chopped onion
2 tsp garlic paste
1 tsp garam masala
2 tsp red chili powder
1 tbsp dhania jeera powder (cumin seed and dry coriander seeds powder)
Pinch of asafoetida (hing)
2 tbsp oil
Salt to taste

Method:


Heat the oil in a pan add asafoetida, garlic past, onion and sauté for second. Add okra and salt, cook for 5 minutes on law flame. Stir occasionally. Add capsicum and cook for another 5 minutes or till okra tender. Add red chili powder, garam masala and dhania jeera powder mix it well. Serve hot with phulka roti.

Vegetable Biryani


Ingredients:      

2 cups basmati rice
2 cup mixed vegetable (potato, carrot, green peas, cabbage)
1 finely chopped green capsicum
2 finely chopped onion
2 cinnamons (dalchini)
4 cloves (laung)
2 cardamoms (elaichi)
1 chakri phool (Star Anise)
1 tsp cumin seeds
1 dry red chili
1 tbsp biryani masala
1 tbsp red chili powder
2 tbsp oil or butter
3 tbsp fry cashew nuts
1 cup water
Salt to taste


Method:


Wash basmati rice well and sock for ½ hrs. Heat the oil in  pressure cooker and add cumin seeds , dry red chili, cinnamon, cloves ,cardamoms, star anise, onion, cook it till onion turn slightly brown, than add capsicum and vegetable mix it well. After that add basmati rice and water, fry cashew nuts, red chili powder, biryani masala, salt to test and close the lid and cook for 3 whistles on high flame. Garnish with cashew nuts and coriander leaves. Serve hot with curd.

Dudhi Halwa - Milk-Gourd dessert with less ghee


Ingredients

4 cups grated dudhi (Bottle gourd)
1 cup sugar
2 tbsp ghee
3 cup milk
½ tsp cardamom powder (elachi powder)
½ cup dry fruit (chopped almonds, cashew nut and raisin)

Method

Heat the ghee in a pan. Add grated dudhi (Bottle gourd) and sauté for 5 minutes add milk and cook on a law flame for 15 minutes or till milk will be evaporated by dudhi, stir occasionally. Add sugar and cardamom powder and mix it well.  Cook till all the moisture has dried. Add dry fruit and mix well garnish with dry fruit. Serve hot or cool...

Sweet Corn paneer spicy salad


Ingredients:

1 cup boiled sweet corn
¼ cup chopped paneer
1 tsp black pepper powder
1 tsp lemon juice
1 tsp olive oil
Salt to taste

Method:

Combine oil, lemon juice, salt and black pepper in a mixing bowl, and mix well. Add boiled sweet corn and chopped paneer and mix it well . Serve chilled with choice of soup for dinner.
