Vegetable Biryani


Ingredients:      

2 cups basmati rice
2 cup mixed vegetable (potato, carrot, green peas, cabbage)
1 finely chopped green capsicum
2 finely chopped onion
2 cinnamons (dalchini)
4 cloves (laung)
2 cardamoms (elaichi)
1 chakri phool (Star Anise)
1 tsp cumin seeds
1 dry red chili
1 tbsp biryani masala
1 tbsp red chili powder
2 tbsp oil or butter
3 tbsp fry cashew nuts
1 cup water
Salt to taste


Method:


Wash basmati rice well and sock for ½ hrs. Heat the oil in  pressure cooker and add cumin seeds , dry red chili, cinnamon, cloves ,cardamoms, star anise, onion, cook it till onion turn slightly brown, than add capsicum and vegetable mix it well. After that add basmati rice and water, fry cashew nuts, red chili powder, biryani masala, salt to test and close the lid and cook for 3 whistles on high flame. Garnish with cashew nuts and coriander leaves. Serve hot with curd.
